How to make balloon animals?

I kinda got the idea, but every time I twist the balloons, it keeps untwisting no matter how many times i twist it!

1. it should only take about three to four twists, but you have to hold a twisted segment in place until you reach a place where you twist two balloon segments into each other. if your twisted segments form a straight line, they will not stay twisted until you make an "X" and then twist that. http://magic.about.com/od/balloontwisting/ss/locktwist_3.htm
